For all the creative and healthy recipes in the book, the baked salmon was especially appealing to me. I often eat fish too seldom, although I like it very much. Even as a child you could make me happy with fish fingers. In addition, I'm always looking for healthy and simple low carb dishes.

I'm sure you already know that I like the most simple recipes that are fast on the plate. The baked salmon is really prepared in no time, because all the ingredients are simply put together in the casserole dish and baked in the oven. Sounds super easy, right?

Recipe for baked salmon with ginger , Tomatoes and pine nuts

Alaskan salmon (you know it all by the fish sticks) is especially lean, low in fat, easily digestible and tastes wonderfully tender and delicious after summer and sea.2 cm

  • 1 garlic clove pressed
  • 150 g Pine Nuts
  • For garnish:
    • Mint
    • Chili
    • Basil
    Instructions
    1. Put the fish fillets and the tomatoes in a not too big casserole dish.
    2. Mix the ingredients for the marinade, sprinkle over the fish fillets and marinate for 1 hour.
    3. Preheat the oven to 180 degrees.
    4. Cook the fish on the middle tray for 12 - 15 minutes, depending on size.
    5. Garnish with mint, chilli and basil.
    Good to know

    The recipe is enough for 4 people as a light appetizer or as a side dish to a mixed salad, baguette or rice.
