I like Recipes that are quick and easy. And if they are still as healthy as these low carb zucchini buffers, then my day is saved. Because I often miss the time and desire to be in the kitchen too long. Are you the same? In summertime, as the days get longer, it may be a bit more time-consuming.

Already as a child I loved potato pancakes over everything. With quite a lot of applesauce! They are still with us often today for a quick lunch, also because Tom is such a big applesauce fan. But I also wanted to have a recipe for a low carb version of my beloved potato dish. And then I got the idea with the vegetable buffers.

Low Carb Zucchini Buffer

With zucchini Pure I've made the healthy vegetable buffer often, if I had little time in the evening and still wanted to eat something healthy. But they taste especially good in combination with grated carrot and baby spinach. And they look pretty colorful too. :)

Quick to delicious vegetable buffers

For the zucchini buffers, coarsely grate the courgettes and carrots, then squeeze out the liquid. Now you wash the baby spinach and cut it into small pieces.

Zucchini, carrots, spinach, chia seeds, egg, parmesan, parsley and oatmeal are now mixed together in a bowl.150 g

  • 2 carrots approx. 100 g
  • 50 g Baby Spinach
  • 1 egg
  • 1 EL Chia seeds
  • 1 EL Parmesan
  • 1 EL parsley
  • 1 EL Oatmeal
  • Salt
  • pepper

      Grate the courgettes and carrots roughly, salt and let stand for 10 minutes. Then squeeze the liquid with a clean kitchen towel. Wash the baby spinach and cut into small pieces.

  • All ingredients in mix together in a bowl.
  • Heat the oil in a pan and add one for each zucchini buffer Fry 1-2 tbsp dough. Press the buffers in the pan a little wrong.
  • Good to know

    The recipe yields approximately 8-10 courgette buffers

    4 WW SmartPoints per person, if you use only 2 teaspoons of oil for frying.
